For my father’s birthday this past week, I took advantage of the fact it is high apple picking season here in Maine. The follow recipe is a yummy, seasonal snack that goes perfectly with a whipped cream topping.
- 3 cups flour
- 4 eggs
- 2 1/2 cups sugar
- 3 tsp. baking powder
- 1/2 tsp salt
- 3 apples — peeled, cored and sliced (I used Macintosh)
- 1 cup vegetable oil
- 1/2 cup orange juice
- 3 tsp vanilla extract
- 5 tbps sugar
- 2 tsp cinnamon
Start by preheating your oven to 350 degrees F. Grease and flour your pan — this is traditionally made in a bunt pan but can also be done in a cake pan.
Sprinkle the sliced apples with 5 tablespoons of sugar and the ground cinnamon. Toss together and set aside.
In a large blow, mix the flour, eggs, 2 1/2 cups sugar, baking powder, salt, vegetable oil, orange juice, and vanilla all together, until well blended. This creates a fairly thick batter.
Pour half of your batter into your prepared pan. Pour the apple mixture over the batter evenly, and pour the remaining batter on top.
Finally, bake in our 350 degree oven for 60-80 minutes and let cool before serving. Enjoy!
