My apologies that my entries have been getting a little bit sparse recently. I’m afraid that as the days get shorter and colder less time is spent out in the garden and a lot more is spent by the fire with a good book. However it is a great time of year to be cooking and baking! This delicious recipe only takes about ten minutes to prepare.
What you’ll need:
- 3/4 cups of flour
- 1 tsp. baking powder
- Pinch of salt
- Two eggs
- 3/4 cup of sugar
- 1/2 tsp. vanilla extract
- 1 stick of butter, melted
- 2 to 3 apples, peeled and sliced.
- 1 cup white sugar
- 1/3 cup cinnamon
Preheat your oven to 350 F and butter a 9 x 13″ baking pan.
In a medium bowl, sift together flour, baking powder and salt.
In a separate bowl, beat the eggs, vanilla and sugar together until smooth. Add the melted butter and whisk until smooth. Gradually add the flour mixture and fold together until the entire mix is smooth and golden.
Pour the mix into your prepared 9 x 13″ baking pan and smooth.
Meanwhile, mix together your sugar and cinnamon in their own bowl. Mix the apple slices in, taking care that each slice gets a thorough coating of cinnamon and sugar.
Arrange the apple slices on top of your cake mix in the pan. I personally like to make sure they are embedded in the cake mix.
Bake for 35-40 minutes. Best served warm with some vanilla ice cream!
