Tasty Treats

Another project I worked on over the holiday season were some canned treats.  It is surprisingly easy to make your own of a lot of tasty treats and homemade always tastes better.  Here are some of the recipes I worked on recently.

Barbecue Sauce

What You’ll Need:

2 tbsp. vegetable oil

1 small onion, diced

3 garlic cloves, chopped

1 can (6 oz.) of tomato paste

2 tsp. ground mustard

2 cups water

1/4 cup molasses

2 tbsp. Worcester sauce

3 tbsp. white vinegar

2 tsp. salt

2 tsp. pepper

In a large saucepan, heat the oil to medium heat and add the onions.  Cook until soft (about 5 minutes) and then add the garlic.

Mix in the tomato paste and mustard and cook, stirring constantly, for about five minutes.  Add the water, tomato sauce, molasses, Worcestershire sauce, salt, and pepper and stir all together until smooth.

Bring to a simmer and reduce heat to low.  Partial cover and let simmer for about two hours.  Let cool before canning and using.

Cranberry Apple Sauce

What You’ll Need:

8-10 apples, peeled, cored, and sliced

3 cups (about two bags) whole cranberries

1/2 cup sugar

1 tsp. cinnamon

2 cups apple cider

In a large saucepan cook the apples and cranberries with the cider vinegar together over medium heat.  Sprinkle the sugar and cinnamon over the top evenly and stir to combine.

Stirring occasionally, continue cooking over medium to low heat until the cranberries and apples are soft and mushy. (about half an hour)

Mash the remaining chunks together with a potato masher until the mix has reached the desired thickness.

Let cool before canning and enjoying.

Almond Butter (my personal favorite)

What You’ll Need:

4 cups of roasted, unsalted almonds

2 tsp. of cinnamon

Pour the almonds and cinnamon into your food processor or blender.  I recommend doing 1/2 or 1/4 of them at a time.  Cover and turn the processor on for about a minute to chop up the almonds.

Scrap down the sides with your spatula.  Continue to process and scrape the sides in until the mixture turns creamy.  This took about ten minutes to reach the consistency I was looking for, it may take you more or less.

Tasty on almost everything and so easy to make!
