What to use up some of your fresh cucumbers but don’t need more pickles? Need a tasty, cool snack on a summer day? I tried this cucumber and avocado soup last night and it was quick and easy to make, and light and fresh out of the fridge.
What You’ll Need:
2-3 medium sized cucumbers, peeled and chopped
2 medium avocados, cut into pieces
1/4 cup of lime juice
3/4 cup of water
large pinch of salt
pinch of pepper
cherry tomato & cilantro for garnish
Mix the cucumbers, avocado, lime juice, water, salt, and pepper in a blender. Blend until the smooth (1-2 minutes).
Transfer to a bowl and top with cilantro and/or cherry tomatoes. Chill for an hour (or more) before serving.
