Yellow Squash Biscuits

It’s supposed to be a rainy few days here in Maine, and that is always a great time to get cooking.  This recipe is great to use up some of your yellow squash, and it makes a tasty treat for any meal of the day.

What You Will Need:

2 cups of yellow squash, shredded

1 tsp. salt

3 cups of flour

1 tbsp. baking powder

1 tsp. baking soda

1 tsp. garlic powder or 1 tbsp. garlic

4 tbsp. butter, melted

1 cup Cheddar cheese, shredded

1/2 cup milk

Preheat your oven to 400 degrees.

Start by mixing flour, salt, baking powder, baking soda, cheese, and garlic.  Slowly mix in the shredded squash and stir until thoroughly combined.

Add in the milk and melted butter.  It is easiest to mix with your hands to make sure everything is combined, and to start forming the biscuits.

Form the mixture into fist-sized balls and place into a greased baking dish.  You can place them right next to each other, do not worry about spacing them out.

Bake in the oven at 400 degrees for 15-20 minutes.  Butter and enjoy!
