I have made several zucchini breads (it is hard not to when you are harvesting lots of zucchini). This one was definitely the most tasty and the perfect treat with a dollop of butter.
What you’ll need:
2 cups shredded zucchini
2 cups flour
1/2 cup unsweetened cocoa powder
1 tsp. baking soda
1/4 tsp. baking powder
pinch of salt
1/2 tsp. ground cinnamon
1/2 cup melted butter
1/2 cup white sugar
12 cup light brown sugar
2 large eggs
1 tsp. vanilla extract
3/4 cup semi sweet chocolate chips
1/4 cup white sugar
1/4 cup brown sugar
1 tbsp. ground cinnamon
Preheat your oven to 350. Lightly grease a 9″ loaf pan.
In a medium bowl, whisk together your flour, baking soda, baking powder, and cinnamon. Set aside.
In a separate, large bowl beat the oil, sugars, eggs, and vanilla extract together until well combined. Slowly mix in the shredded zucchini. Add a handful of chocolate chips and a 1/2 cup of the flour mixture and blend, and continue to add flour and chocolate chips as you blend. This will make blending easier, and keep the distribution even.
Once thoroughly mixed, scrape into your baking pan. In a small bowl, mix together the remaining sugars and cinnamon and sprinkle over the top of your batter.
Bake in the preheated oven for 60 minutes or until a toothpick comes away clean.
